Driving home after my hot yoga class this morning, my stomach was growling, and I was already dreaming up what fun yogurt creation I could make on such a hot and humid day.
My brain started taking a mental inventory of what I had at home. First, I remembered I had a lone lime. On Friday, I ran to the store and picked up pineapples and limes to make a salsa to complement a pork dish. That’s when I realized I also had leftover pineapple! I keep a well-stocked pantry, so, of course, I had shredded coconut.
At this point, I’m pretty sure I audibly sang, “You put the lime in the coconut and mix it all together.” (Also, I just lost The Game thinking about how I came up with the idea. IYKYK)
Anyway, this combination is a winner! It’s the perfect high-protein breakfast or post-workout snack on a hot, humid day. To be honest, I ate it way too fast. I may need to keep limes and pineapple on hand all summer just for this.
Here’s what I did:
First, I mixed a scoop of unflavored whey protein powder with about 3/4 cup of Greek yogurt, a pinch of shredded coconut (5g), and the zest of the lime.
Then, I topped the mixture with about 100g of cut pineapple and another 5g of shredded coconut. I was initially going to squeeze the juice of the lime on top, but I decided to cut the flesh of the lime supreme style instead. Great choice! The texture was a nice addition.
As I was snapping the photo to share this idea, I realized it needed something crunchy. So, I sprinkled a little Grape Nuts on top—and again, great choice!
I’m calculating my bowl at about 350 calories, 40g protein, 41g carbs, and 4g of fat.
